Description of the Book:
This unit attempts to respond to the increasing problems of malnutrition in the United States seemingly related to rising market prices, low quality foods attracting the consumer dollar and the shrinking number of students studying nutrition in our schools. It is designed to enable secondary school students to evaluate food selections, understand the problems connected with malnutrition and consider the effort needed to maintain our present level of nutrition as populations continue to grow. Four basic topics are presented: (1) Basic Nutritional Needs of Humans; (2) Scientific Techniques Used in Determining Nutritional Requirements; (3) Processing, Preservation and Future Supplies of Food; and (4) Prenatal Development and the Role Played by Nutrition. Optional areas are presented including consumer tips and the pet population explosion. The culminating activity is a field trip to a research laboratory specializing in pet and zoo animal nutrition. Teaching aid materials include behavioral objectives of the unit, a suggested time line, appropriate methodologies, suggested equipment and evaluative instruments.
